Today’s cover recipe comes from the cover of The S’Mores Cookbook by Susan Whetzel. One of the cover recipes is forĀ S’Mores Cereal Bars, and that is the recipe I chose to feature. The cookbook contains more than 50 recipes that are S’mores-themed. It’s obviously dessert-focused, but you’ll also find cute gift ideas (S’Mores Party Kit and S’mores Bars in Jars) as well as recipes for homemade marshmallows, homemade graham crackers… and even a S’Mores Martini. It’s a fun book, and if you’re crazy about the classic S’Mores, you’ll likely find a lot of recipes you want to try in this book.

S'Mores Cereal Bars

Yield: 24 bars

Prep Time: 10 min

Cook Time: 5 min


5 tablespoons butter
6 cups mini marshmallows
8 cups graham cereal
2 cups dark chocolate chunks


1. Spray a 9x13-inch pan with nonstick cooking spray.

2. Melt the butter and marshmallows in a large saucepan over low heat, until marshmallows are melted- roughly 3 to 5 minutes, stirring constantly; remove from heat.

3. Carefully stir in the cereal until evenly mixed, then allow to cool for 2 to 3 minutes. Stir in 1 cup of the chocolate. Press into the prepared pan with a buttered back of a spatula or your fingers; press the remaining chocolate on top. Cool completely, then cut into squares to serve.


*6 cups of mini marshmallows equals one whole package of mini marshmallows (10 ounce bag)
*8 cups of graham cereal equals one whole box of Golden Grahams (12-ounce box)
*2 cups dark chocolate chunks equals (10-ounce bag)

The results:

If you’ve made Rice Krispie treats before, these are basically the same thing with graham cereal substitution and added chocolate. I personally would have been okay without the chocolate (but you probably shouldn’t listen very closely to me since I don’t like chocolate all that much). They were delicious! My chocolate still wanted to melt, even though I gave the mixture a good few minutes to cool. My market didn’t carry chocolate chunks, so I went with chips instead. I might prefer to use milk chocolate instead of dark chocolate next time. The dark chocolate was just a little over-powering in terms of flavor.

Did this recipe deserve the cover spotlight?

Yes, definitely! They fit the theme of S’mores (marshmallows + graham + chocolate). It was an easy, delicious recipe- which is what you want to see in a cookbook like this!
